Ingredients

  • 2 tablespoons almond flour
  • 1 tablespoon coconut flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon erythritol or other keto-friendly sweetener
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1 large egg
  • 1 tablespoon unsweetened almond milk
  • 1 tablespoon melted butter or coconut oil
  • 1 tablespoon shredded carrots
  • 1 tablespoon chopped walnuts (optional)


Instructions

  1. In a microwave-safe mug, combine almond flour, coconut flour, baking powder, erythritol, cinnamon, and nutmeg.
  2. Mix in the egg and stir until combined.
  3. Add almond milk and melted butter; mix well.
  4. Fold in shredded carrots and walnuts if using.
  5. Microwave on high for 1-1.5 minutes until set.
  6. Let cool for a minute before enjoying.
