- 1 tablespoon erythritol or other keto-friendly sweetener
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1 large egg
- 1 tablespoon unsweetened almond milk
- 1 tablespoon melted butter or coconut oil
- 1 tablespoon shredded carrots
- 1 tablespoon chopped walnuts (optional)
Instructions
- In a microwave-safe mug, combine almond flour, coconut flour, baking powder, erythritol, cinnamon, and nutmeg.
- Mix in the egg and stir until combined.
- Add almond milk and melted butter; mix well.
- Fold in shredded carrots and walnuts if using.
- Microwave on high for 1-1.5 minutes until set.
- Let cool for a minute before enjoying.
