Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. In a bowl, mix almond flour, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  2. In another bowl, whisk the eggs.
  3. Dip each chicken piece into the egg, then coat with the almond flour mixture.
  4. Preheat the air fryer to 400°F (200°C).
  5. Place the chicken bites in the air fryer basket in a single layer and drizzle with olive oil.
  6. Cook for 10-12 minutes or until golden brown and cooked through, flipping halfway.
