- 2 cups almond flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 2 large eggs
- 1/2 teaspoon almond extract
- 1/4 cup sliced almonds for topping
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine almond flour, sugar, baking powder, and salt.
- Add cold cubed butter and mix until crumbly.
- In another bowl, whisk together eggs and almond extract.
- Pour the egg mixture into the dry ingredients and mix until just combined.
- Shape the dough into a circle about 1 inch thick on a parchment-lined baking sheet.
- Cut into 8 wedges and sprinkle with sliced almonds.
- Bake for 15-20 minutes until golden brown.
- Let cool slightly before serving.
Notes
- For a sweeter scone, feel free to add a bit more sugar.
- These scones are best enjoyed fresh but can be stored in an airtight container for a couple of days.
