Description

These scones are deliciously nutty and perfect for a gluten-free diet.


Ingredients

  • 2 cups almond flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 2 large eggs
  • 1/2 teaspoon almond extract
  • 1/4 cup sliced almonds for topping


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine almond flour, sugar, baking powder, and salt.
  3. Add cold cubed butter and mix until crumbly.
  4. In another bowl, whisk together eggs and almond extract.
  5. Pour the egg mixture into the dry ingredients and mix until just combined.
  6. Shape the dough into a circle about 1 inch thick on a parchment-lined baking sheet.
  7. Cut into 8 wedges and sprinkle with sliced almonds.
  8. Bake for 15-20 minutes until golden brown.
  9. Let cool slightly before serving.

Notes
