Instructions
- In a saucepan, heat olive oil and sauté onions until translucent.
- Add Arborio rice and toast for a few minutes.
- Gradually add chicken broth, stirring until absorbed and rice is creamy.
- Stir in peas, mozzarella, salt, and pepper; let it cool.
- Once cool, form rice mixture into balls and dip in egg, then roll in breadcrumbs.
- Heat oil in a deep pan and fry rice balls until golden brown.
- Drain on paper towels and serve hot.
