Description

Deliciously crispy on the outside and creamy on the inside, Authentic Sicilian Rice Balls, or Arancini, are a beloved Italian snack made with risotto and filled with a variety of ingredients.


Ingredients

  • 2 cups Arborio rice
  • 4 cups chicken broth
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 cup peas
  • 1 cup mozzarella cheese, diced
  • 2 eggs
  • 1 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • oil for frying


Instructions

  1. In a saucepan, heat olive oil and sauté onions until translucent.
  2. Add Arborio rice and toast for a few minutes.
  3. Gradually add chicken broth, stirring until absorbed and rice is creamy.
  4. Stir in peas, mozzarella, salt, and pepper; let it cool.
  5. Once cool, form rice mixture into balls and dip in egg, then roll in breadcrumbs.
  6. Heat oil in a deep pan and fry rice balls until golden brown.
  7. Drain on paper towels and serve hot.
