- 1 ripe avocado
- 1/4 cup unsweetened cocoa powder
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 cups plant-based milk (such as almond or coconut)
- 1/2 cup chia seeds
- A pinch of sea salt
Instructions
- Start by scooping the flesh of the ripe avocado into a high-speed blender. Add the cocoa powder, honey or maple syrup, vanilla extract, plant-based milk, and a pinch of sea salt. Blend everything together until you achieve a silky and smooth consistency.
- In a separate bowl, pour the blended mixture over the chia seeds. Mix thoroughly to ensure that all the seeds are well-coated with the chocolatey goodness.
- Transfer the mixture into a container with a lid and place it in the refrigerator. Allow it to chill for at least 4 hours, or overnight, so the chia seeds can swell and create a thick pudding-like texture.
- After chilling, give the pudding a good stir. If you find it too dense, simply add a splash of plant-based milk to loosen it up to your liking.
- Serve the pudding cold, garnished with your choice of fresh fruit, a drizzle of honey, or a handful of granola for added crunch.
