Description

Baba Ghanoush Pasta is a flavorful twist on traditional pasta, combining the creamy texture of baba ghanoush with your favorite pasta.


Ingredients

Scale
  • 8 ounces of your favorite pasta (penne or fusilli recommended)
  • 1 medium-sized eggplant (approximately 1 pound)
  • 2 tablespoons of tahini
  • 2 tablespoons of extra virgin olive oil
  • 2 tablespoons of freshly squeezed lemon juice
  • 2 cloves of garlic, finely minced
  • 1 teaspoon of ground cumin
  • Salt and freshly cracked black pepper to taste
  • 2 tablespoons of fresh parsley, chopped (for garnish)
  • A pinch of red pepper flakes (optional, for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the eggplant in half lengthwise and place it cut-side down on a baking sheet lined with parchment paper.
  3. Roast the eggplant in the oven for about 30-35 minutes, until the flesh is tender and the skin is nicely charred.
  4. Remove the eggplant from the oven and allow it to cool slightly.
  5. Meanwhile, bring a large pot of salted water to a boil and cook the pasta according to the package instructions.
  6. Once al dente, drain the pasta, reserving about ½ cup of the cooking water, and set it aside.
  7. Once the eggplant is cool enough to handle, scoop out the soft flesh and transfer it to a food processor.
  8. Add the tahini, olive oil, lemon juice, minced garlic, cumin, salt, and pepper to the food processor.
  9. Blend the mixture until it reaches a smooth and creamy consistency, adding reserved pasta water if necessary.
  10. In a large bowl, combine the drained pasta with the baba ghanoush sauce, tossing well to coat.
  11. Serve the dish warm, garnished with chopped parsley and a sprinkle of red pepper flakes if desired.

Notes

  • For a spicier kick, add more red pepper flakes.
  • This dish can be served warm or at room temperature.
