Description

Delicious baked avocado filled with eggs and topped with crispy bacon, perfect for a hearty breakfast.


Ingredients

  • 2 ripe avocados
  • 4 large eggs
  • 4 strips bacon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped chives


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut the avocados in half, remove the pit, and scoop out a little extra flesh to create room for the egg.
  3. Place the avocado halves in a baking dish and crack an egg into each half.
  4. Season with salt and pepper and crumble cooked bacon on top.
  5. Bake for about 15-20 minutes, until the egg white is set but the yolk is still runny.
  6. Garnish with chives before serving.
