- 2 ripe avocados
- 4 large eggs
- 4 strips bacon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped chives
Instructions
- Preheat the oven to 425°F (220°C).
- Cut the avocados in half, remove the pit, and scoop out a little extra flesh to create room for the egg.
- Place the avocado halves in a baking dish and crack an egg into each half.
- Season with salt and pepper and crumble cooked bacon on top.
- Bake for about 15-20 minutes, until the egg white is set but the yolk is still runny.
- Garnish with chives before serving.

- For best results, choose avocados that are ripe but not overripe.
- You can substitute bacon with turkey bacon or omit it for a vegetarian option.
