Balsamic Baked Chicken Breast with Mozzarella Cheese is a delicious and easy-to-make dish that combines tender chicken with a flavorful balsamic glaze and melted mozzarella.

- 4 boneless, skinless chicken breasts
- ¼ cup balsamic vinegar
- 3 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp honey
- 1 tsp dried Italian herbs
- Salt and black pepper, to taste
- 1 cup shredded mozzarella cheese
- 1 cup cherry tomatoes, halved
- Fresh basil leaves, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together balsamic vinegar, olive oil, garlic, honey, Italian herbs, salt, and pepper.
- Place chicken breasts in a baking dish and pour the balsamic mixture over them. Add cherry tomatoes around the chicken.
- Bake for 20–25 minutes, or until chicken is cooked through.
- Remove from oven, sprinkle mozzarella cheese over each chicken breast, and return to bake for 5 more minutes until cheese is melted and bubbly.
- Garnish with fresh basil before serving.
Notes
- Ensure the chicken is cooked to an internal temperature of 165°F (75°C).
- Feel free to add other vegetables like bell peppers or zucchini for extra flavor.
