A delicious and flavorful balsamic fig pork tenderloin that’s perfect for a special occasion or a weeknight dinner.

- 2 pounds pork tenderloin
- 1 cup balsamic vinegar
- 1/2 cup fig jam
- 3 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the balsamic vinegar, fig jam, minced garlic, and chopped rosemary.
- In a skillet, heat olive oil over medium-high heat. Season the pork tenderloin with salt and pepper, then sear on all sides until browned.
- Transfer the seared pork to a baking dish and pour the balsamic fig mixture over the top.
- Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
- Let the pork rest for 5-10 minutes before slicing. Serve with pan juices.
Notes
- For best results, marinate the pork in the balsamic fig mixture for a couple of hours or overnight.
- Serve with a side of roasted vegetables or a salad.
