Description

A delicious and flavorful balsamic fig pork tenderloin that’s perfect for a special occasion or a weeknight dinner.


Ingredients

  • 2 pounds pork tenderloin
  • 1 cup balsamic vinegar
  • 1/2 cup fig jam
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together the balsamic vinegar, fig jam, minced garlic, and chopped rosemary.
  3. In a skillet, heat olive oil over medium-high heat. Season the pork tenderloin with salt and pepper, then sear on all sides until browned.
  4. Transfer the seared pork to a baking dish and pour the balsamic fig mixture over the top.
  5. Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 145°F (63°C).
  6. Let the pork rest for 5-10 minutes before slicing. Serve with pan juices.

Notes

  • For best results, marinate the pork in the balsamic fig mixture for a couple of hours or overnight.
  • Serve with a side of roasted vegetables or a salad.
