A delicious twist on traditional banana bread, these cinnamon rolls are soft, fluffy, and topped with a creamy icing.

- 1 cup mashed ripe bananas (about 2 bananas)
- 1/2 cup warm milk
- 1/4 cup melted butter
- 1 egg
- 1/4 cup sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 3 1/4 cups all-purpose flour (approximately)
- 1/2 tsp salt
- 1/2 cup brown sugar (for filling)
- 2 tbsp ground cinnamon (for filling)
- 1/4 cup softened butter (for filling)
- 4 oz (120g) cream cheese (for icing)
- 2 tbsp butter (for icing)
- 1/2 cup powdered sugar (for icing)
- 1 tsp vanilla extract (for icing)
- 1–2 tbsp milk (to adjust icing consistency)
Instructions
- Activate the yeast: In a bowl, mix warm milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
- Make the dough: Add mashed bananas, egg, melted butter, and salt to the yeast mixture. Gradually mix in the flour until a soft dough forms. Knead for 8–10 minutes.
- First rise: Cover and let the dough rise in a warm place for 1 hour, or until doubled in size.
- Shape the rolls: Roll out the dough into a rectangle. Spread with softened butter, then sprinkle with brown sugar and cinnamon. Roll up tightly and slice into 12 rolls.
- Second rise: Place rolls in a greased baking dish, cover, and let rise for another 30–40 minutes.
- Bake: Preheat oven to 350°F (180°C) and bake for 20–25 minutes, until golden brown.
- Make the icing: Beat cream cheese, butter, powdered sugar, vanilla, and milk until smooth.
- Serve: Spread icing over warm rolls and enjoy!
