Description
Beef Paprikash is a creamy and comforting dish made with tender beef, sweet Hungarian paprika, and a rich sour cream sauce.

- 1½ lbs (700 g) beef stew meat, cut into cubes
- 2 tbsp vegetable oil or butter
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 tbsp sweet Hungarian paprika
- 1 tsp smoked paprika (optional)
- Salt and pepper to taste
- 1 cup beef broth
- ½ cup sour cream
- 1 tbsp flour (to thicken, optional)
- Fresh parsley, chopped (for garnish)
- Optional (for serving): Egg noodles, mashed potatoes, or rice
Instructions
- In a large pot or Dutch oven, heat oil or butter over medium-high heat. Add beef cubes and brown on all sides. Remove and set aside.
- In the same pot, add a bit more oil if needed. Sauté the chopped onions until soft and golden. Add garlic and cook for another minute.
- Stir in the sweet paprika and smoked paprika. Quickly mix to coat the onions—be careful not to burn the paprika as it can turn bitter.
- Return the beef to the pot. Pour in the beef broth, season with salt and pepper, and stir well. Cover and simmer on low heat for 1½ to 2 hours, or until the beef is tender.
- In a small bowl, mix sour cream with flour (if using) until smooth. Stir into the beef mixture and cook for another 5–10 minutes until thickened and creamy.
- Spoon over buttered egg noodles, mashed potatoes, or rice. Garnish with fresh parsley.
Notes
- For a richer flavor, use a combination of beef and lamb.
- Adjust the amount of paprika according to your taste preference.
