Description

Deliciously healthy cookies made with beets and oats.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup cooked and pureed beets
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix the oats, beets, sugars, coconut oil, and vanilla.
  3. In another bowl, combine flour, baking soda, and salt.
  4. Mix dry ingredients with wet ingredients until just combined.
  5. Fold in chocolate chips.
  6. Drop spoonfuls of dough onto a baking sheet.
  7. Bake for 12-15 minutes or until edges are golden.
  8. Allow to cool before serving.

Notes

  • For a gluten-free option, substitute with gluten-free flour.
