Description

A rich and moist fruit cake perfect for the festive season.


Ingredients

  • 2 cups mixed dried fruits
  • 1 cup chopped nuts
  • 1 cup unsalted butter
  • 2 cups all-purpose flour
  • 1 cup brown sugar
  • 4 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt


Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large bowl, cream together the butter and brown sugar.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In another bowl, combine flour, baking powder, spices, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the mixed dried fruits and nuts.
  7. Pour the batter into a greased and floured cake pan.
  8. Bake for 2 hours or until a toothpick inserted in the center comes out clean.
  9. Cool completely before serving.

Notes
