- 2 cups mixed dried fruits
- 1 cup chopped nuts
- 1 cup unsalted butter
- 2 cups all-purpose flour
- 1 cup brown sugar
- 4 large eggs
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 300°F (150°C).
- In a large bowl, cream together the butter and brown sugar.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, combine flour, baking powder, spices, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the mixed dried fruits and nuts.
- Pour the batter into a greased and floured cake pan.
- Bake for 2 hours or until a toothpick inserted in the center comes out clean.
- Cool completely before serving.
Notes
- This cake can be baked a few weeks in advance and wrapped tightly for flavor development.
- For a different taste, add a splash of rum or brandy to the batter.
