Instructions
- Preheat your oven to 350°F (175°C) and grease a baking pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the creamed mixture alternately with the coconut milk and extracts.
- Mix in the pink food coloring until the desired color is reached.
- Fold in the shredded coconut.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
