Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup coconut milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 cup pink food coloring
  • 3 cups shredded coconut


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry mixture to the creamed mixture alternately with the coconut milk and extracts.
  6. Mix in the pink food coloring until the desired color is reached.
  7. Fold in the shredded coconut.
