Deliciously rich and fudgy brownies made with black beans and avocado for a healthy twist.
Ingredients

- 1 can black beans, drained and rinsed
- 1 ripe avocado
- 1/2 cup cocoa powder
- 1/2 cup maple syrup
- 1/4 cup peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a food processor, blend the black beans and avocado until smooth.
- Add cocoa powder, maple syrup, peanut butter, vanilla, baking powder, and salt. Blend until well combined.
- Stir in chocolate chips if using.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before cutting into squares.
Notes
- For a sweeter brownie, add more maple syrup.
- Can be served with a scoop of ice cream for an indulgent treat.
