Ingredients

  • 500 g (1 lb) boneless chicken breast or thighs, sliced thin
  • 1 cup mushrooms, sliced (white or cremini)
  • 1 onion, sliced
  • 1 bell pepper (optional), sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon black pepper (freshly cracked)
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1 tablespoon oil (vegetable or sesame)
  • Green onions for garnish (optional)

Instructions

  1. In a bowl, combine chicken slices with 1 tablespoon soy sauce and half the black pepper. Let sit for 15 minutes.
  2. Heat oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and nearly cooked through. Remove and set aside.
  3. In the same skillet, add garlic, onion, mushrooms, and bell pepper. Stir-fry for 3–4 minutes until veggies are tender.
  4. Return the chicken to the skillet. Add remaining soy sauce, oyster sauce, and rest of the black pepper. Mix well.
  5. Add the cornstarch slurry and stir until the sauce thickens and coats the chicken and mushrooms.
  6. Garnish with green onions if desired. Serve hot over steamed rice or noodles.

Notes

  • For a spicier dish, add more black pepper or some chili flakes.
  • This recipe can be easily doubled for larger servings.
