A creamy and delightful dessert made with black sesame seeds and topped with a refreshing ginger syrup.

- 1 cup black sesame seeds
- 2 cups whole milk
- 1 cup heavy cream
- 3/4 cup granulated sugar
- 4 large egg yolks
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup granulated sugar (for ginger syrup)
- 1/2 cup water
- 1 tablespoon fresh ginger, grated
- 1 tablespoon lemon juice
Instructions
- In a dry skillet over medium heat, toast the black sesame seeds for about 3-4 minutes until fragrant. Remove from heat and let cool slightly.
- In a blender, combine the toasted black sesame seeds, whole milk, and heavy cream. Blend until smooth. Strain the mixture through a fine-mesh sieve into a saucepan to remove any solid bits.
- In a separate bowl, whisk together the sugar, egg yolks, cornstarch, vanilla extract, and salt until well combined.
- Gradually add the warm black sesame mixture to the egg yolk mixture, whisking constantly to prevent curdling.
- Return the combined mixture to the saucepan over medium heat. Cook, stirring constantly, until the custard thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.
- Once thickened, pour the custard into individual serving dishes or ramekins. Allow to cool to room temperature, then refrigerate for at least 2 hours until set.
- For the ginger syrup, combine sugar, water, grated ginger, and lemon juice in a small saucepan. Bring to a boil over medium heat, then reduce to a simmer for 5 minutes. Remove from heat and let cool. Strain to remove ginger pieces.
- To serve, drizzle the ginger syrup over the chilled black sesame custard.
Notes
- For a richer flavor, consider adding a splash of coconut milk to the custard mixture.
- For a lighter version, substitute half of the heavy cream with additional milk.
