Description

A creamy and delightful dessert made with black sesame seeds and topped with a refreshing ginger syrup.


Ingredients

  • 1 cup black sesame seeds
  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar (for ginger syrup)
  • 1/2 cup water
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon lemon juice


Instructions

  1. In a dry skillet over medium heat, toast the black sesame seeds for about 3-4 minutes until fragrant. Remove from heat and let cool slightly.
  2. In a blender, combine the toasted black sesame seeds, whole milk, and heavy cream. Blend until smooth. Strain the mixture through a fine-mesh sieve into a saucepan to remove any solid bits.
  3. In a separate bowl, whisk together the sugar, egg yolks, cornstarch, vanilla extract, and salt until well combined.
  4. Gradually add the warm black sesame mixture to the egg yolk mixture, whisking constantly to prevent curdling.
  5. Return the combined mixture to the saucepan over medium heat. Cook, stirring constantly, until the custard thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.
  6. Once thickened, pour the custard into individual serving dishes or ramekins. Allow to cool to room temperature, then refrigerate for at least 2 hours until set.
  7. For the ginger syrup, combine sugar, water, grated ginger, and lemon juice in a small saucepan. Bring to a boil over medium heat, then reduce to a simmer for 5 minutes. Remove from heat and let cool. Strain to remove ginger pieces.
  8. To serve, drizzle the ginger syrup over the chilled black sesame custard.

Notes

  • For a richer flavor, consider adding a splash of coconut milk to the custard mixture.
  • For a lighter version, substitute half of the heavy cream with additional milk.
