- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, cubed
- 3/4 cup milk (plus extra for brushing)
- 1 cup fresh or frozen blueberries
- 1 tsp vanilla extract
- 1 tbsp coarse sugar (optional, for topping)
Instructions
- Preheat oven: Set to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the butter: Add the cold butter cubes and use a pastry cutter or fingers to mix until crumbly.
- Add wet ingredients: Stir in milk and vanilla until just combined. Gently fold in blueberries.
- Shape the biscuits: Drop spoonfuls of dough onto the baking sheet, or form and cut with a biscuit cutter. Brush tops with a little milk and sprinkle coarse sugar if desired.
- Bake: Cook for 15–18 minutes, until golden brown.
- Serve: Enjoy warm, optionally drizzled with glaze or honey.
