- 1 ½ cups graham cracker crumbs
- ½ cup unsweetened shredded coconut
- ½ cup unsalted butter, melted
- 1 cup cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lime juice
- Zest of 1 lime
- 1 cup fresh blueberries
- ½ cup coconut cream
Instructions
- In a medium bowl, combine the graham cracker crumbs and shredded coconut.
- Pour in the melted butter and mix until well combined.
- Press the mixture firmly into the bottom of a 9×9-inch square baking dish to form the crust.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add the powdered sugar, vanilla extract, lime juice, and lime zest, mixing until well combined and creamy.
- Gently fold in the fresh blueberries, being careful not to crush them.
- Spread the cream cheese mixture evenly over the prepared crust in the baking dish.
- Pour the coconut cream over the top and spread it evenly.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until set.
- Once set, cut into squares and serve chilled.
Notes
- For a chocolate twist, add ¼ cup of cocoa powder to the cream cheese mixture.
- For a more tropical flavor, substitute the blueberries with diced mango or pineapple.
