Description

A refreshing no-bake dessert featuring a delightful combination of blueberries, lime, and coconut.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsweetened shredded coconut
  • ½ cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime juice
  • Zest of 1 lime
  • 1 cup fresh blueberries
  • ½ cup coconut cream


Instructions

  1. In a medium bowl, combine the graham cracker crumbs and shredded coconut.
  2. Pour in the melted butter and mix until well combined.
  3. Press the mixture firmly into the bottom of a 9×9-inch square baking dish to form the crust.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  5. Gradually add the powdered sugar, vanilla extract, lime juice, and lime zest, mixing until well combined and creamy.
  6. Gently fold in the fresh blueberries, being careful not to crush them.
  7. Spread the cream cheese mixture evenly over the prepared crust in the baking dish.
  8. Pour the coconut cream over the top and spread it evenly.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or until set.
  10. Once set, cut into squares and serve chilled.

Notes

  • For a chocolate twist, add ¼ cup of cocoa powder to the cream cheese mixture.
