Description

A hearty and nutritious soup made with broccoli, barley, and cannellini beans.


Ingredients

Scale
  • 2 cups chopped broccoli
  • 1 cup barley
  • 1 can cannellini beans, drained and rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until onions are translucent.
  2. Add barley and vegetable broth, bring to a boil.
  3. Reduce heat and simmer for 30 minutes or until barley is tender.
  4. Add broccoli and cannellini beans, cook for an additional 10 minutes.
  5. Stir in thyme, salt, and pepper before serving.

Notes

  • For added flavor, consider adding a splash of lemon juice before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
