Description
A hearty and nutritious soup made with broccoli, barley, and cannellini beans.
Ingredients

- 2 cups chopped broccoli
- 1 cup barley
- 1 can cannellini beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 6 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté until onions are translucent.
- Add barley and vegetable broth, bring to a boil.
- Reduce heat and simmer for 30 minutes or until barley is tender.
- Add broccoli and cannellini beans, cook for an additional 10 minutes.
- Stir in thyme, salt, and pepper before serving.
Notes
- For added flavor, consider adding a splash of lemon juice before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
