- 1 head cauliflower, cut into florets
- 1 cup almond flour
- 1 cup water
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/2 cup buffalo sauce
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup crumbled blue cheese
- 1 tablespoon lemon juice
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 450°F (232°C).
- In a bowl, mix almond flour, water, garlic powder, onion powder, smoked paprika, and salt until smooth.
- Dip cauliflower florets in the batter and place on a baking sheet.
- Bake for 20 minutes, flipping halfway through.
- Remove from oven and toss with buffalo sauce.
- Return to the oven and bake for another 10 minutes.
- In a separate bowl, mix sour cream, mayonnaise, blue cheese, lemon juice, and black pepper to create the dip.
- Serve hot with the blue cheese dip.
Notes
- For extra crispiness, use a wire rack on the baking sheet.
- Adjust the heat level of the buffalo sauce according to your taste.
