Deliciously crispy buffalo cauliflower bites served with a creamy sugar-free blue cheese dip, perfect for a keto snack!


Ingredients

  • 1 head cauliflower, cut into florets
  • 1 cup almond flour
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 cup buffalo sauce
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup crumbled blue cheese
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 450°F (232°C).
  2. In a bowl, mix almond flour, water, garlic powder, onion powder, smoked paprika, and salt until smooth.
  3. Dip cauliflower florets in the batter and place on a baking sheet.
  4. Bake for 20 minutes, flipping halfway through.
  5. Remove from oven and toss with buffalo sauce.
  6. Return to the oven and bake for another 10 minutes.
  7. In a separate bowl, mix sour cream, mayonnaise, blue cheese, lemon juice, and black pepper to create the dip.
  8. Serve hot with the blue cheese dip.
