- 1 small onion, grated
- 2 eggs
- 1/4 cup all-purpose flour

- 2–3 tbsp butter (for frying)
- Sour cream or applesauce, for serving
Instructions
- Place grated potatoes in a clean towel and squeeze out excess liquid.
- In a bowl, mix potatoes, onion, eggs, flour, salt, and pepper.
- Heat butter in a skillet over medium heat.
- Scoop about 1/4 cup of mixture into the skillet and flatten into a pancake.
- Cook 3–4 minutes per side until golden and crispy.
- Drain on paper towels.
- Serve warm with sour cream or applesauce.

- Ensure to squeeze out as much liquid as possible from the potatoes for crispier pancakes.
- Adjust the seasoning according to your taste.
