- 1 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and black pepper, to taste

- 1/2 cup mayonnaise
- 2 tbsp apple cider vinegar
- 1 tbsp prepared horseradish
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper (optional for extra heat)
- Salt and pepper, to taste
Instructions
- Marinate the chicken: Rub chicken with olive oil and season with Cajun seasoning, garlic powder, paprika, salt, and pepper. Let sit for 20–30 minutes.
- Grill the chicken: Heat your grill or grill pan to medium-high. Grill the chicken for 5–7 minutes per side, or until fully cooked and slightly charred.
- Make the Alabama white sauce: In a small bowl, whisk together mayonnaise, apple cider vinegar, horseradish, mustard, garlic powder, cayenne (if using), salt, and pepper. Chill in the fridge until ready to use.
- Serve: Slice the grilled Cajun chicken and drizzle generously with Alabama white sauce. Garnish with chopped parsley if desired.
Notes
- For extra heat, add more cayenne pepper to the sauce.
- Let the chicken rest for a few minutes after grilling for juicier meat.
