- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon Cajun seasoning
- Salt to taste
- 1 cup breadcrumbs
- 1/2 cup buttermilk
- Oil for frying
Instructions
- Hard boil the eggs, cool, peel, and cut them in half.
- Remove the yolks and mix with mayonnaise, mustard, Cajun seasoning, and salt.
- Fill the egg whites with the yolk mixture.
- Dip each filled egg half in buttermilk, then coat with breadcrumbs.
- Heat oil in a frying pan and fry the eggs until golden brown.
- Drain on paper towels and serve hot.
Notes
- For extra spice, add more Cajun seasoning to the filling.
- These can be made ahead of time and fried just before serving.
