Description

A flavorful and tender roast lamb dish inspired by California cuisine.


Ingredients

Scale
  • 1 leg of lamb, boned and tied
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup red wine
  • 1 cup vegetable stock


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine garlic, rosemary, olive oil, salt, and pepper to form a paste.
  3. Rub the paste all over the lamb leg.
  4. Place the lamb in a roasting pan.
  5. Pour the red wine and vegetable stock into the pan.
  6. Roast for about 1.5 hours or until the internal temperature reaches 145°F (63°C).
  7. Remove from the oven and let rest for 15 minutes before slicing.

Notes

  • Serving with roasted vegetables complements the flavors.
