Ingredients

- 1 leg of lamb, boned and tied
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup red wine
- 1 cup vegetable stock
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine garlic, rosemary, olive oil, salt, and pepper to form a paste.
- Rub the paste all over the lamb leg.
- Place the lamb in a roasting pan.
- Pour the red wine and vegetable stock into the pan.
- Roast for about 1.5 hours or until the internal temperature reaches 145°F (63°C).
- Remove from the oven and let rest for 15 minutes before slicing.
Notes
- Serving with roasted vegetables complements the flavors.
- Leftovers can be used in sandwiches or salads.
