- 4 lemons
- 2 cups sugar
- 1 cup water
Instructions
- Wash the lemons thoroughly and cut them into quarters.
- Remove the flesh and pith from the lemon peels.
- In a pot, combine the sugar and water, then bring to a boil.
- Add the lemon peels to the pot and simmer for about 45 minutes.
- Drain the peels and let them cool.
- Coat the cooled peels in extra sugar.
- Store in an airtight container.
Notes
- Make sure to thoroughly remove the pith from the peels for the best taste.
- These can be dipped in chocolate for an extra treat!
