Description

A delicious Caramelised Onion, Feta & Spinach Quiche recipe that is perfect for any meal.


Ingredients

  • 1 pie crust (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup shredded mozzarella cheese (optional)


Instructions

  1. Preheat the oven to 375°F.
  2. If using a store-bought pie crust, fit it into a 9-inch pie dish and prick the bottom with a fork.
  3. Pre-bake the crust for 10 minutes, then remove from the oven and set aside.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, for about 20-25 minutes until the onions are caramelized and golden brown.
  6. Remove from heat and let cool slightly.
  7. In a mixing bowl, whisk together the eggs, heavy cream, black pepper, and nutmeg until well combined.
  8. Stir in the chopped spinach and crumbled feta cheese.
  9. Once the onions have cooled, fold them into the egg mixture.
  10. Pour the filling into the pre-baked pie crust.
  11. If desired, sprinkle shredded mozzarella cheese on top for extra flavor.
  12. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
  13. Let the quiche cool for about 10 minutes before slicing. Serve warm or at room temperature.

Notes

  • For a lighter version, substitute half-and-half for the heavy cream.
  • Add cooked bacon or ham for a heartier quiche.
