A delicious Caramelised Onion, Feta & Spinach Quiche recipe that is perfect for any meal.

- 1 pie crust (store-bought or homemade)
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1 cup fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup shredded mozzarella cheese (optional)
Instructions
- Preheat the oven to 375°F.
- If using a store-bought pie crust, fit it into a 9-inch pie dish and prick the bottom with a fork.
- Pre-bake the crust for 10 minutes, then remove from the oven and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the sliced onions, sugar, and salt. Cook, stirring occasionally, for about 20-25 minutes until the onions are caramelized and golden brown.
- Remove from heat and let cool slightly.
- In a mixing bowl, whisk together the eggs, heavy cream, black pepper, and nutmeg until well combined.
- Stir in the chopped spinach and crumbled feta cheese.
- Once the onions have cooled, fold them into the egg mixture.
- Pour the filling into the pre-baked pie crust.
- If desired, sprinkle shredded mozzarella cheese on top for extra flavor.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
- Let the quiche cool for about 10 minutes before slicing. Serve warm or at room temperature.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- Add cooked bacon or ham for a heartier quiche.
