- 1 cup granulated sugar

- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9-inch springform pan.
- In a large mixing bowl, combine the grated carrots, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until combined.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in the crushed pineapple and nuts, if using.
- Pour half of the carrot cake batter into the prepared springform pan.
- In a separate bowl, beat the cream cheese until smooth. Add the granulated sugar, eggs, and vanilla extract, and mix until well combined. Pour the cheesecake mixture over the carrot cake batter in the pan.
- Top the cheesecake layer with the remaining carrot cake batter, spreading it evenly.
- Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean. Allow the cheesecake to cool in the pan for 30 minutes, then refrigerate for at least 4 hours or overnight.
- For the creamy topping, whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
- Once the cheesecake is chilled, remove it from the springform pan and spread the creamy topping over the top.
Notes
- For a spicier flavor, add 1/4 teaspoon of ground ginger to the carrot cake batter.
- To make it a bit healthier, substitute half of the oil with unsweetened applesauce.
