- 2 cups mashed potatoes (preferably cold/leftover)
- 1 cup shredded cheddar cheese (or cheese of choice)
- 1/4 cup grated Parmesan cheese
- 2 eggs
- 2 tablespoons chopped chives or green onions
- Salt and pepper to taste
- Optional: 1/4 teaspoon garlic powder or paprika
- Butter or cooking spray (for greasing the muffin tin)
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin with butter or cooking spray.
- In a bowl, combine the mashed potatoes, cheddar cheese, Parmesan, eggs, chives, and seasonings. Mix until well combined and smooth.
- Scoop the mixture into the mini muffin cups, filling them just to the top.
- Bake for 20–25 minutes or until puffed and golden brown on top.
- Let them cool for a few minutes before removing from the pan. Serve warm as a snack, side dish, or party appetizer.
