Description

Cheesy Mashed Potato Puff Bites are delicious, bite-sized snacks made from leftover mashed potatoes, cheese, and seasonings, perfect for any occasion.


Ingredients

  • 2 cups mashed potatoes (preferably cold/leftover)
  • 1 cup shredded cheddar cheese (or cheese of choice)
  • 1/4 cup grated Parmesan cheese
  • 2 eggs
  • 2 tablespoons chopped chives or green onions
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon garlic powder or paprika
  • Butter or cooking spray (for greasing the muffin tin)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin with butter or cooking spray.
  2. In a bowl, combine the mashed potatoes, cheddar cheese, Parmesan, eggs, chives, and seasonings. Mix until well combined and smooth.
  3. Scoop the mixture into the mini muffin cups, filling them just to the top.
  4. Bake for 20–25 minutes or until puffed and golden brown on top.
  5. Let them cool for a few minutes before removing from the pan. Serve warm as a snack, side dish, or party appetizer.
