Ingredients

- 2 pounds veal shoulder, butterflied
- 1 cup cooked chestnuts, chopped
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1/4 cup parsley, chopped
- 1/4 cup fresh thyme, chopped
- 1 onion, finely chopped
- 1 egg, beaten
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the chestnuts, breadcrumbs, garlic, parsley, thyme, onion, egg, salt, and pepper.
- Spread the mixture over the veal, then roll it up tightly.
- Secure with kitchen twine and place in a roasting pan.
- Roast for about 1.5 hours, or until the internal temperature reaches 160°F (70°C).
- Let rest for 10 minutes before slicing.
Notes
- For extra flavor, marinate the veal in herbs and wine overnight.
- Serve with a side of roasted vegetables.
