Description

A savory veal roll filled with chestnuts and herbs, perfect for special occasions.


Ingredients

Scale
  • 2 pounds veal shoulder, butterflied
  • 1 cup cooked chestnuts, chopped
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1/4 cup parsley, chopped
  • 1/4 cup fresh thyme, chopped
  • 1 onion, finely chopped
  • 1 egg, beaten
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix together the chestnuts, breadcrumbs, garlic, parsley, thyme, onion, egg, salt, and pepper.
  3. Spread the mixture over the veal, then roll it up tightly.
  4. Secure with kitchen twine and place in a roasting pan.
  5. Roast for about 1.5 hours, or until the internal temperature reaches 160°F (70°C).
  6. Let rest for 10 minutes before slicing.

Notes

  • For extra flavor, marinate the veal in herbs and wine overnight.
