Description

A delicious and nutritious alternative to traditional tuna salad made with chickpeas.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/4 cup red onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup dill pickles, chopped
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper


Instructions

  1. In a large bowl, mash the chickpeas with a fork, leaving some chunks for texture.
  2. Add the red onion, celery, dill pickles, mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper.
  3. Mix until well combined.
  4. Serve chilled or at room temperature.
