Description

A delicious and flavorful snack recipe for Chili Lime Roasted Cashews that combines spices and lime for a perfect crunch.

Ingredients

Scale
  • 2 cups raw cashews
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1 tablespoon lime juice
  • Zest of 1 lime
  • 1 tablespoon honey or maple syrup (optional for sweetness)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine the raw cashews and olive oil. Toss until the cashews are evenly coated.
  3. In a small bowl, mix together the chili powder, garlic powder, onion powder, cumin, smoked paprika, and salt. Sprinkle this spice mixture over the cashews and toss until well coated.
  4. Add the lime juice, lime zest, and honey or maple syrup (if using) to the cashews. Toss again to ensure everything is evenly distributed.
  5. Spread the seasoned cashews in a single layer on the prepared baking sheet.
  6. Roast in the preheated oven for 15-20 minutes, stirring halfway through, until the cashews are golden brown and fragrant. Keep a close eye on them to prevent burning.
  7. Remove from the oven and let cool completely on the baking sheet before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the spice mix.
  • Try substituting the lime juice with lemon juice for a different citrus flavor.
