Description

Delicious chocolate-covered cherry thumbprint cookies filled with cherry preserves, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup cherry preserves
  • 8 ounces semisweet chocolate, chopped
  • 2 tablespoons shortening


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the vanilla extract.
  4. Gradually mix in the flour and salt until just combined.
  5. Roll dough into 1-inch balls and place on baking sheets.
  6. Use your thumb to make an indentation in the center of each ball.
  7. Fill each indentation with cherry preserves.
  8. Bake for 15-18 minutes or until lightly golden.
  9. In a microwave-safe bowl, combine chocolate and shortening. Microwave in 30-second intervals until melted and smooth.
  10. Dip the tops of the cookies in the chocolate mixture and place on a wire rack to cool.

Notes

  • For a richer flavor, use dark chocolate for dipping.
