- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup cherry preserves
- 8 ounces semisweet chocolate, chopped
- 2 tablespoons shortening
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the vanilla extract.
- Gradually mix in the flour and salt until just combined.
- Roll dough into 1-inch balls and place on baking sheets.
- Use your thumb to make an indentation in the center of each ball.
- Fill each indentation with cherry preserves.
- Bake for 15-18 minutes or until lightly golden.
- In a microwave-safe bowl, combine chocolate and shortening. Microwave in 30-second intervals until melted and smooth.
- Dip the tops of the cookies in the chocolate mixture and place on a wire rack to cool.
Notes
- For a richer flavor, use dark chocolate for dipping.
- Store cookies in an airtight container for up to one week.
