Description

These Chocolate Dipped Shortbread Cookies are the perfect combination of buttery shortbread and rich chocolate. Ideal for special occasions and gifting!


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 tablespoon vegetable oil


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract.
  4. Gradually add the flour and salt, mixing until combined.
  5. Form the dough into small balls and place them on a baking sheet.
  6. Flatten each ball slightly with the bottom of a glass.
  7. Bake for 12-15 minutes or until the edges are lightly golden.
  8. Let the cookies cool completely.
  9. Melt the chocolate chips and vegetable oil together in a microwave-safe bowl.
  10. Dip the cooled cookies halfway into the chocolate and place them on parchment paper to set.
