Ingredients

- 1 pound chorizo, diced
- 2 cups chopped clams, fresh or canned
- 4 cups bone broth
- 1 cup diced potatoes
- 1 cup diced carrots
- 1 cup diced celery
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons smoked paprika
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chorizo and cook until browned.
- Add onions, garlic, carrots, celery, and potatoes; sauté until tender.
- Stir in the smoked paprika and cayenne pepper.
- Add the clam juice and bone broth; bring to a simmer.
- Combine the clams and simmer for another 10 minutes.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
