Description

A hearty stew combining the rich flavors of chorizo and clams, perfect for a cozy meal.


Ingredients

  • 1 pound chorizo, diced
  • 2 cups chopped clams, fresh or canned
  • 4 cups bone broth
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons smoked paprika
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chorizo and cook until browned.
  3. Add onions, garlic, carrots, celery, and potatoes; sauté until tender.
  4. Stir in the smoked paprika and cayenne pepper.
  5. Add the clam juice and bone broth; bring to a simmer.
  6. Combine the clams and simmer for another 10 minutes.
  7. Season with salt and pepper.
  8. Garnish with fresh parsley before serving.

Notes

  • This stew can be made with different types of seafood.
  • Feel free to adjust the spices for more or less heat based on preference.
