Description

Delicious and festive almond flour crepes spiced for Christmas, served with a sugar-free berry compote.


Ingredients

Scale
  • 1 cup almond flour
  • 2 large eggs
  • 1 cup unsweetened almond milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 pinch salt
  • 1 cup mixed berries
  • 1 tablespoon sweetener of choice


Instructions

  1. In a bowl, whisk together almond flour, eggs, almond milk, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to coat the pan evenly.
  3. Cook for 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.
  4. Repeat until all batter is used.
  5. In another pan, combine mixed berries and sweetener, stirring over medium heat until it bubbles and thickens.
  6. Serve crepes warm topped with the berry compote.

Notes

  • For a lighter version, use less sweetener in the berry compote.
  • These crepes can be made ahead of time and stored in the fridge.
