Description
Delicious and festive almond flour crepes spiced for Christmas, served with a sugar-free berry compote.
Ingredients

- 1 cup almond flour
- 2 large eggs
- 1 cup unsweetened almond milk
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 pinch salt
- 1 cup mixed berries
- 1 tablespoon sweetener of choice
Instructions
- In a bowl, whisk together almond flour, eggs, almond milk, vanilla extract, cinnamon, nutmeg, and salt until smooth.
- Heat a non-stick skillet over medium heat and pour in a small amount of batter, swirling to coat the pan evenly.
- Cook for 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.
- Repeat until all batter is used.
- In another pan, combine mixed berries and sweetener, stirring over medium heat until it bubbles and thickens.
- Serve crepes warm topped with the berry compote.
Notes
- For a lighter version, use less sweetener in the berry compote.
- These crepes can be made ahead of time and stored in the fridge.
