Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking dish (approximately 8×8 inches) with parchment paper, ensuring some paper hangs over the edges for easy lifting later.
- In a large bowl, mix the rolled oats and chopped walnuts together.
- In another bowl, blend the agave syrup or brown rice syrup with melted shea butter, almond extract, cinnamon, allspice, cloves, and sea salt until smooth.
- Pour this mixture over the oat and walnut blend, stirring thoroughly to ensure everything is well coated.
- Gently fold in the chopped dried apricots or figs and dark chocolate chunks if desired.
- Spread the mixture evenly into the prepared baking dish, pressing it down firmly to create a compact layer.
- Bake for 20-25 minutes until the top is golden and fragrant.
- Once baked, let it cool in the pan for about 10 minutes, then lift it out using the parchment paper and allow it to cool completely on a wire rack before slicing into bite-sized pieces.
