  • 1/2 cup chopped dried apricots or figs
  • 1/2 cup dark chocolate chunks (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish (approximately 8×8 inches) with parchment paper, ensuring some paper hangs over the edges for easy lifting later.
  2. In a large bowl, mix the rolled oats and chopped walnuts together.
  3. In another bowl, blend the agave syrup or brown rice syrup with melted shea butter, almond extract, cinnamon, allspice, cloves, and sea salt until smooth.
  4. Pour this mixture over the oat and walnut blend, stirring thoroughly to ensure everything is well coated.
  5. Gently fold in the chopped dried apricots or figs and dark chocolate chunks if desired.
  6. Spread the mixture evenly into the prepared baking dish, pressing it down firmly to create a compact layer.
  7. Bake for 20-25 minutes until the top is golden and fragrant.
  8. Once baked, let it cool in the pan for about 10 minutes, then lift it out using the parchment paper and allow it to cool completely on a wire rack before slicing into bite-sized pieces.
