Description

Classic Chocolate Éclairs are a delicious French pastry filled with creamy custard and topped with rich chocolate icing.


Ingredients

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1/4 teaspoon salt
  • 2 cups heavy cream
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces semisweet chocolate
  • 1/4 cup milk


Instructions

  1. In a saucepan, bring water and butter to a boil.
  2. Stir in flour and salt until the mixture forms a ball.
  3. Remove from heat and let cool slightly.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pipe the dough onto a baking sheet and bake until golden brown.
  6. Allow to cool before filling with whipped cream.
  7. Melt chocolate and milk together, then dip the tops of eclairs in chocolate glaze.

Notes

  • Allow the éclairs to cool completely before filling.
  • For best results, use high-quality chocolate for the glaze.
