Ingredients

- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 4 large eggs
- 1/4 teaspoon salt
- 2 cups heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 8 ounces semisweet chocolate
- 1/4 cup milk
Instructions
- In a saucepan, bring water and butter to a boil.
- Stir in flour and salt until the mixture forms a ball.
- Remove from heat and let cool slightly.
- Add eggs one at a time, mixing well after each addition.
- Pipe the dough onto a baking sheet and bake until golden brown.
- Allow to cool before filling with whipped cream.
- Melt chocolate and milk together, then dip the tops of eclairs in chocolate glaze.

- Allow the éclairs to cool completely before filling.
- For best results, use high-quality chocolate for the glaze.
- Can be made ahead and frozen for later use.
