Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and diced
  • 6 to 8 tablespoons ice-cold water
  • 1 pound ground pork
  • 1 pound ground beef
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 egg, beaten (for glaze)


Instructions

  1. Mix the flour and salt in a large mixing bowl.
  2. Incorporate the cold butter until the mixture resembles small pebbles.
  3. Gradually add ice-cold water until the dough forms a cohesive ball.
  4. Split the dough into two equal portions, flatten into disks, wrap in plastic wrap, and chill for at least one hour.
  5. In a skillet over medium heat, brown the ground pork and beef, draining any excess fat.
  6. Add the diced onion and minced garlic, sautéing until the onion is soft and translucent.
  7. Season the meat mixture with thyme, cinnamon, nutmeg, black pepper, and salt.
  8. Pour in the beef broth and Worcestershire sauce, stirring to combine, and let it simmer for about 5 minutes.
  9. Preheat the oven to 425°F.
  10. Roll out one dough disk on a floured surface to fit a 9-inch pie dish and fill it with the cooled meat mixture.
  11. Roll out the second dough disk and lay it over the filling, trimming and crimping the edges to seal the pie.
  12. Make several small slits in the top crust and brush with the beaten egg.
  13. Bake for 25-30 minutes, or until the crust is golden brown.
  14. Allow to cool for about 10 minutes before slicing and serving.
