- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 2 large eggs
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix panko breadcrumbs and shredded coconut.
- In another bowl, whisk the eggs.
- Dip shrimp into the eggs, then coat with the coconut and panko mixture.
- Place shrimp on a baking sheet and bake for 12-15 minutes, or until golden.
- In a separate bowl, mix mayonnaise, lime juice, garlic powder, paprika, and salt to make the sauce.
- Serve shrimp hot with the creamy mayo sauce.
Notes
- For extra crunch, you can fry the shrimp instead of baking them.
- Adjust the spice level by adding cayenne pepper to the coating mix.
