Description

A delicious coconut shrimp recipe served with a creamy mayo sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix panko breadcrumbs and shredded coconut.
  3. In another bowl, whisk the eggs.
  4. Dip shrimp into the eggs, then coat with the coconut and panko mixture.
  5. Place shrimp on a baking sheet and bake for 12-15 minutes, or until golden.
  6. In a separate bowl, mix mayonnaise, lime juice, garlic powder, paprika, and salt to make the sauce.
  7. Serve shrimp hot with the creamy mayo sauce.

Notes

  • For extra crunch, you can fry the shrimp instead of baking them.
  • Adjust the spice level by adding cayenne pepper to the coating mix.
