Description

A delicious beef roast rubbed with coffee and cocoa, served with a rich gravy.


Ingredients

  • 1 beef roast
  • 2 tablespoons ground coffee
  • 2 tablespoons cocoa powder
  • 1 tablespoon brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 cups beef broth
  • 1 cup heavy cream


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, mix together the coffee, cocoa, brown sugar, paprika, salt, and pepper.
  3. Rub the mixture all over the beef roast.
  4. In an oven-safe skillet, heat the olive oil over medium-high heat.
  5. Sear the roast on all sides until browned.
  6. Add the beef broth to the skillet and transfer to the oven.
  7. Roast until the internal temperature reaches your desired doneness.
  8. Remove the roast and let it rest before slicing.
  9. For the gravy, whisk the heavy cream into the drippings in the skillet over medium heat.
  10. Serve slices of the roast with cocoa gravy on top.
