- 1 beef roast
- 2 tablespoons ground coffee
- 2 tablespoons cocoa powder
- 1 tablespoon brown sugar
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 2 cups beef broth
- 1 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, mix together the coffee, cocoa, brown sugar, paprika, salt, and pepper.
- Rub the mixture all over the beef roast.
- In an oven-safe skillet, heat the olive oil over medium-high heat.
- Sear the roast on all sides until browned.
- Add the beef broth to the skillet and transfer to the oven.
- Roast until the internal temperature reaches your desired doneness.
- Remove the roast and let it rest before slicing.
- For the gravy, whisk the heavy cream into the drippings in the skillet over medium heat.
- Serve slices of the roast with cocoa gravy on top.

- Let the roast rest for at least 10 minutes before slicing to retain juices.
