- 1 can black beans, rinsed and drained
- 2 eggs
- 1 tablespoon vegetable oil

- ¼ teaspoon black pepper
- 1 avocado, sliced
- ½ cup chopped cilantro
Instructions
- In a saucepan, heat the black beans over medium heat. Add cumin, salt, and pepper, and stir well.
- Stir in the cooked rice, mixing until heated through.
- In a separate pan, heat the vegetable oil and fry the eggs to your desired doneness.
- Serve the rice and beans topped with a fried egg, avocado slices, and chopped cilantro.

- For extra flavor, add a dash of hot sauce.
