A delicious twist on pasta featuring creamy avocado and zesty finger lime.
Ingredients

- 8 ounces spaghetti or linguine
- 2 ripe avocados, pitted and peeled
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 2 tablespoons olive oil
- 1 garlic clove, minced
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/4 cup finger lime pearls (or regular lime juice if unavailable)
- Fresh cilantro or parsley for garnish
Instructions
- Cook the spaghetti or linguine according to package instructions in a large pot of salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.
- In a blender or food processor, combine the avocados, lime juice, lime zest, olive oil, minced garlic, salt, and pepper. Blend until smooth and creamy. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- In a large mixing bowl, combine the cooked pasta with the avocado sauce. Toss until the pasta is evenly coated.
- Gently fold in the grated Parmesan cheese and finger lime pearls. Adjust seasoning with additional salt and pepper if needed.
- Serve immediately, garnished with fresh cilantro or parsley.
Notes
- For added protein, consider mixing in cooked shrimp or grilled chicken.
- If finger limes are not available, substitute with regular lime juice and a sprinkle of zest for a similar citrus flavor.
