Ingredients

  • 12 oz chicken sausage, sliced into coins
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup dry orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 cups baby spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Optional: red pepper flakes, fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook for 4–5 minutes until browned.
  2. Add diced onion and cook for 2–3 minutes until translucent. Stir in garlic and cook for 1 minute until fragrant.
  3. Add orzo and stir to coat in the oil and aromatics. Toast lightly for 1–2 minutes.
  4. Pour in chicken broth and bring to a gentle boil. Reduce heat to simmer and cover. Cook for 8–10 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
  5. Stir in heavy cream, spinach, and Parmesan cheese. Let cook for another 2–3 minutes until spinach wilts and sauce thickens.
  6. Season with salt, pepper, and optional red pepper flakes. Garnish with chopped parsley before serving.
