- 12 oz chicken sausage, sliced into coins
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 cup dry orzo pasta
- 2 cups chicken broth
- 1/2 cup heavy cream
- 2 cups baby spinach
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- Optional: red pepper flakes, fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced chicken sausage and cook for 4–5 minutes until browned.
- Add diced onion and cook for 2–3 minutes until translucent. Stir in garlic and cook for 1 minute until fragrant.
- Add orzo and stir to coat in the oil and aromatics. Toast lightly for 1–2 minutes.
- Pour in chicken broth and bring to a gentle boil. Reduce heat to simmer and cover. Cook for 8–10 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
- Stir in heavy cream, spinach, and Parmesan cheese. Let cook for another 2–3 minutes until spinach wilts and sauce thickens.
- Season with salt, pepper, and optional red pepper flakes. Garnish with chopped parsley before serving.
