Ingredients

  • 1 cup amaranth
  • 4 cups water
  • 2 cups coconut milk
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup shredded coconut


Instructions

  1. In a pot, combine amaranth and water. Bring to a boil and reduce to a simmer for 20 minutes, or until amaranth is tender.
  2. Stir in coconut milk, maple syrup, vanilla extract, and salt. Cook for an additional 10 minutes.
  3. Remove from heat and fold in shredded coconut.
  4. Serve warm or chilled, garnished with extra coconut if desired.
