- 1 cup amaranth
- 4 cups water
- 2 cups coconut milk
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup shredded coconut
Instructions
- In a pot, combine amaranth and water. Bring to a boil and reduce to a simmer for 20 minutes, or until amaranth is tender.
- Stir in coconut milk, maple syrup, vanilla extract, and salt. Cook for an additional 10 minutes.
- Remove from heat and fold in shredded coconut.
- Serve warm or chilled, garnished with extra coconut if desired.
Notes
- For a richer flavor, try using full-fat coconut milk.
- This pudding can be stored in the refrigerator for up to 3 days.
