- 2 large chicken breasts, sliced or pounded thin
- Salt and pepper to taste
- 1/2 teaspoon garlic powder
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Optional: a pinch of Italian seasoning or parsley for garnish
- 8 oz (225 g) twisted pasta (fusilli, rotini, etc.)
- 1 tablespoon butter
- 1/2 cup shredded mozzarella or cheddar cheese
- Extra Parmesan for topping
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Season chicken with salt, pepper, and garlic powder. In a skillet, heat olive oil and cook chicken on both sides until golden and cooked through. Remove and set aside.
- In the same pan, add minced garlic and sauté for 30 seconds.
- Pour in heavy cream and chicken broth, bring to a simmer. Add Parmesan and stir until melted and creamy.
- Return chicken to the skillet, spooning sauce over the top. Simmer for 2–3 minutes.
- In a separate pot, toss drained pasta with butter and shredded cheese until melted and creamy. Stir in a spoonful of the Parmesan sauce if desired.
- Serve the chicken over the cheesy twisted pasta and garnish with parsley and more Parmesan.
