- 1 pound ground beef or lamb
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika

- 1/4 teaspoon red pepper flakes (optional)
- 1 large egg
- 2 tablespoons fresh parsley, chopped
- 1 cup plain Greek yogurt
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- Olive oil for drizzling
Instructions
- Preheat the oven to 400°F.
- In a large bowl, combine ground beef or lamb, breadcrumbs, onion, minced garlic, cumin, paprika, salt, black pepper, red pepper flakes, egg, and parsley. Mix until well combined.
- Shape the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Bake for 20-25 minutes or until cooked through and browned.
- While the köfte are baking, prepare the garlic yogurt sauce by mixing together Greek yogurt, minced garlic, lemon juice, salt, and olive oil until smooth.
- To assemble the bowls, place a serving of rice or quinoa at the bottom of each bowl.
- Top with baked köfte, cherry tomatoes, cucumber, and a generous drizzle of garlic yogurt sauce.
- Sprinkle with fresh parsley and drizzle with olive oil.
- Serve immediately.
Notes
- For a spicier kick, add chopped jalapeños to the köfte mixture.
- For a vegetarian option, substitute the meat with cooked lentils and adjust the spices to taste.
