Creamy Garlic Yogurt Köfte Bowls are a flavorful and satisfying dish featuring spiced meatballs served over rice or quinoa, topped with a creamy garlic yogurt sauce.


Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • 1 cup plain Greek yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • Olive oil for drizzling


Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine ground beef or lamb, breadcrumbs, onion, minced garlic, cumin, paprika, salt, black pepper, red pepper flakes, egg, and parsley. Mix until well combined.
  3. Shape the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake for 20-25 minutes or until cooked through and browned.
  5. While the köfte are baking, prepare the garlic yogurt sauce by mixing together Greek yogurt, minced garlic, lemon juice, salt, and olive oil until smooth.
  6. To assemble the bowls, place a serving of rice or quinoa at the bottom of each bowl.
  7. Top with baked köfte, cherry tomatoes, cucumber, and a generous drizzle of garlic yogurt sauce.
  8. Sprinkle with fresh parsley and drizzle with olive oil.
  9. Serve immediately.
