Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • 3 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup heavy cream
  • ½ cup pepperoncini peppers, sliced (plus 2 tbsp brine)
  • 2 oz cream cheese, softened
  • ½ tsp Italian seasoning
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Pat chicken dry and season with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through (165°F / 74°C internal temp). Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds. Add chicken broth, heavy cream, pepperoncini, brine, cream cheese, and Italian seasoning. Stir until smooth and creamy.
  4. Return chicken to the skillet and spoon sauce over the top. Simmer 2–3 minutes to meld flavors.
  5. Garnish with parsley and serve over mashed potatoes, pasta, or rice.
