- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt & pepper, to taste
- 3 cloves garlic, minced
- ½ cup chicken broth
- ½ cup heavy cream
- ½ cup pepperoncini peppers, sliced (plus 2 tbsp brine)
- 2 oz cream cheese, softened
- ½ tsp Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Pat chicken dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through (165°F / 74°C internal temp). Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds. Add chicken broth, heavy cream, pepperoncini, brine, cream cheese, and Italian seasoning. Stir until smooth and creamy.
- Return chicken to the skillet and spoon sauce over the top. Simmer 2–3 minutes to meld flavors.
- Garnish with parsley and serve over mashed potatoes, pasta, or rice.

- Adjust the amount of pepperoncini to taste for more or less heat.
