  • 4 boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil or butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon paprika
  • 1/2 teaspoon thyme
  • Salt and black pepper to taste
  • 1/2 cup shredded cheddar or mozzarella cheese (optional)
  • Fresh parsley for garnish

Instructions

  1. Season chicken with paprika, salt, pepper, and thyme. Heat olive oil in a large skillet over medium heat. Sear chicken on both sides until golden brown (about 3–4 minutes per side). Remove and set aside.
  2. In the same skillet, add diced onion and garlic. Cook for 2–3 minutes until softened and fragrant.
  3. Stir in the uncooked rice, then pour in chicken broth and cream. Bring to a simmer.
  4. Nestle the chicken into the rice mixture. Cover and simmer on low heat for 20–25 minutes, or until the rice is tender and the chicken is cooked through.
  5. Sprinkle shredded cheese on top and cover for a few minutes until melted.
  6. Top with fresh parsley and enjoy warm.
