Description

A delicious dessert made with thin crepes and a sweet raspberry-cassis sauce.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 1/2 cups milk
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • 2 cups fresh raspberries
  • 1/4 cup cassis (blackcurrant liqueur)
  • 2 tablespoons sugar


Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, sugar, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and brush lightly with melted butter.
  3. Pour a small amount of batter into the skillet, tilting to cover the bottom.
  4. Cook for 1-2 minutes until edges are golden; flip and cook for another minute.
  5. Repeat with remaining batter, stacking crepes on a plate.
  6. For the sauce, combine raspberries, cassis, and sugar in a saucepan over medium heat.
  7. Cook until berries break down and sauce thickens, about 5-7 minutes.
  8. Serve crepes warm, topped with raspberry-cassis sauce.

Notes

  • For sweeter crepes, add more sugar to the batter.
  • Can substitute frozen raspberries if fresh are not available.
  • Serve with whipped cream for added richness.
